The Best Pumpkin
Pie
For crust:
14 2-inch gingersnaps (about 4 oz.)
1 cup pecans (about 4 oz.)
1/4 cup granulated sugar
1/2 stick (1/4 cup) unsalted butter, melted & cooled
Preheat oven to 350.
In foodprocessor, grind cookies, pecans, sugar until
fine. Add butter,
blending until combined well. press into glass pie plate.
Bake in middle of oven 15 minutes or until crisp and
golden around edge. Cool on rack
For filling:
3 eggs
1/3 cup granulated sugar
1/3 cup brown sugar
2 cups canned pureed pumpkin
1 tsp. ground ginger
1 1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground allspice
1/4 tsp. ground cardamom
pinch of salt
3/4 cup heavy cream
3/4 cup half & half
pecan halves for garnish
Preheat oven to 450.
Beat eggs & sugar together until light. Stir in
pumpkin & spices and mix
thoroughly. Stir in cream and half & half.
Bake at 450 for 8 minutes, then reduce heat to 325.
Bake for 40-45 minutes.
